The outlook of Kompia
Kompia is one of the bread product that originated from Fuzhou, which a capital city of the Fujian Province of China. Among all the Fuzhou delicacies, Kompia is considered to be one of my favourites snack since I was a kid. The main ingredients are just simply flour and a little bit of salt. 

The existence of the Kompia is named after Qi Jiguang during the Ming Dynasty. At ancient time, this wheat flour bread is made with an opening in the middle so the soldiers of the Qi Jiguang army able to string a couple of kompias. Then it is hung around their neck for the ease to bring around when marching and doing long battle. With this high carbohydrates content snacks, it is used to replenish energy of the soldiers. After claim a series of victories, the later generation has named this cakes as Kompia to commemorate Qi Jiguang.

How does Kompia taste like? 
The stunning & awesome part of the kompia is the crunchiness and the crispiness of the other surface of the kompia , a bit salty and a little bit of the charred flavor. The reason it is charred because the dough is baked with the traditional charcoal oven.

Often, the kompia is just like a little burger that can be stuffed with chicken toasted filling, satay slice and minced meat.

诱人飘香的光餅是福州人代代相傳最具有代表性的一種老子號小吃。由面粉和一点的小盐巴制作的窑烘小圆饼都获得无论是男女老少的喜爱。由於製餅的麵粉團不經發酵,所以也稱無酵餅。

光餅是續‘戚繼光’將軍而命名的。古時,因無法做飯,他們就做了無發酵的餅中間來去打仗。在這餅中間弄了一個小洞,用線把幾個光餅串在一起,綁在兵士的脖子或是上作為高碳水化合物的干糧來飽腹。

光餅的表面外層是一點硬邦邦的,咬下去的口感就是有咕咕嚕嚕的酥脆聲,外皮還有一些窯焦味,因為它是用著傳統的碳烤方式去做的。看的人都會不僅垂涎三尺,吃下去的人真的會回憶無窮,

光餅可以淨食,另一種吃法是在光餅中間夾上肉片配食,做成一道“福州三文治”。
